The Salvation Army says it served 5.6 million hot meals to survivors and first responders following Hurricane Katrina in 2005. Just imagine what the need is in the extensive and heavily populated area hit by Sandy. While the winds were still howling, the Honorable Order wrote a check for $30,000 to assist in the effort. THANKS to all who responded to our email announcement with special contributions! We heard from most states plus Mexico, Canada, Italy, Germany, Australia and the United Kingdom. That amount of money, by the way, will pay for running ten mobile feeding units providing hot meals for a period of six days.

Grants are awarded at a series of “Grant Parties” attended by recepient organizations. The photo is of “Wilson”. Wilson is a two year old canine who has been training to become an assistance dog to a child or adult with physical disabilities. His organization, Paws With Purpose, brought him along to the party and he accepted the award for them. Needless to say, he was a hit with all attendees.

On behalf of all of us here on the Coast, I thank you! So many need so much.
Colonel Goff – Gulfport MS

From those of us in Hurricane Katrina’s direct path, I say “Thank you Colonels”. Recovery here in South Mississippi is slow but with the help of others from around our country we are building back.
Colonel Anderson – Long Beach MS

I had two and a half feet of water in my house and lost all of my furniture and files. My losses didn’t prove to be fatal and I will recover.

Glad to hear we are assisting in the Katrina relief effort. There are many persons down this way that are in dire need for assistance.
Colonel Mills – Pascagoula MS

I want to thank the Colonels for their support of the Katrina Relief efforts.
My wife’s sister has a slab left, my son’s had some walls standing but is destroyed and our home had hip high water in the main part of the house, shoulder high in the lower room. We will be able to restore our house in time. We are now in a FEMA camper trailer on the property. My wife has Parkinson’s, so it is difficult for her to get around in the trailer. I am not complaining, just trying to give you an idea of the devastation here. We are so much better off than many. There are many in tents or still living in cars.

Hopefully in the next few weeks I can get power back to the house. Right now we run extension cords from the FEMA temporary pole to work in the house.

We have had help from several of the Baptist groups and have seen at least one of the Kentucky workers in the neighborhood. Thanks.
Colonel Hammack – Gulfport MS

EDITOR’S NOTE: The assistance provided by Kentucky Colonels in the Gulf region was possible because of your continued support of the Good Works Program. We also thank all the Colonels who have written to us. We are proud to say all listed on this page are Good Works Program contributors.

We should have pointed out that he is an avid cook! In the section of this web site where we present the Trustees who serve on the Honorable Order’s Board, we tell you about General Jim Lindsey’s passion for the outdoors, about his Vietnam service, and that he is a whiz in the advertising business. Well, to prove that we left something out of the bio, this year he went to the Kentucky State Fair and won a blue ribbon for his personal cornbread concoction – Aztec Corn Muffins.

The recipe isn’t exactly true southern. It includes chopped almonds, blue cornmeal, vanilla and heavy sugar. Jim did try a more traditional approach. “Four years ago, I made a muffin that I thought was pretty darned good,” he said. “Let me tell you, those little ladies in the starched white aprons who entered their muffins beat me pretty bad.” Thus began the quest to achieve a personal goal of the highest level. After hundreds of pans of muffins, some edible some not, Jim hit the jackpot in 2005. “My life is now complete”, Jim said as they pinned the blue ribbon on him.

General Lindsey’s Blue Ribbon Aztec Cornbread MuffinsSupplies:

1 cup all-purpose flour
3/4 cup stone ground yellow corn meal
1/4 cup stone ground blue corn meal1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
5 tablespoons sugar
1/4 cup coarsely chopped, sliced almonds
1 1/4 cup buttermilk1 large egg
2 teaspoons pure vanilla extract
1/4 cup peanut oil
2 tablespoons butter

Preheat the oven to 400 degrees. In a large bowl, combine the corn meal, flour, baking powder, salt and almonds. In a small bowl, stir the baking soda into the buttermilk. In a second small bowl, whisk together the egg, sugar, oil and vanilla. Then whisk in the buttermilk.

Use a non-stick muffin pan with 3 1/2 X 2 1/2 X 1 1/2 deep muffin holes – (at least 6 muffin holes in the muffin pan)

Place 1/4 tablespoon of butter in each muffin hole. Place the muffin pan in the heated oven until the butter begins to sizzle. Add the wet ingredients to the dry and stir together. Fill the muffin holes 3/4 full, return to the oven and bake for 25 minutes.

Makes 6 large muffins.
